You can use gr:category multiple times for indicating multiple categories per product; those can be either hierarchical or flat strings:

I recommend using one of the two properties foaf:depiction or schema:image. You can attach it either to the gr:ProductOrService or the gr:Offering.

Note that at this point Google does not show product images in Rich Snippets.
